The Technology Centre of the Academy of Sciences of Turkmenistan has developed a technology for making melon chips. The patent of the State Intellectual Property Service of the Ministry of Finance and Economy of Turkmenistan for this invention in the field of the food industry was recently issued to the head of the laboratory of the Technocentre Meret Hudayberdiyev.
The technology for the production of melon chips has been developed in line with the modern trend of providing the population with high-vitamin and environmentally friendly products all year round by creating new innovative food products, the taste of which is previously known, but the nutritional properties have been changed.
The proposed method for the production technology of melon products called «melon chips» by applying thermal and mechanical effects is aimed at improving the quality of biologically active substances, improving the presentation, ensuring long-term storage and meeting the demand of the consumer market for the product.
The method for making chips includes pre-treatment - peeling, horizontal division in the middle of an ellipse-shaped shape, cutting a melon peeled from seeds into rings of the same size, 0.7-0.8 cm thick. The product is then treated with ascorbic acid to reduce alkalinity and prevent the growth of microbacteria.
The drying process, which is divided into three stages, removes free and bound moisture.
The new product is in great demand among the population.
